These walnuts have been soaked overnight in purified water. Soaking them liberates enzymes that would otherwise remain dormant in a raw walnut, or destroyed in a roasted nut. Then the nuts are gently dried at low temperatures. This gives them a crunchy texture, similar to a roasted nut, with all the benefits of being raw.
