We soak all our nuts and seeds in purified water for twelve hours.
This begins the germination process. We then dehydrate them at a low temperature.
Why do we do this?
Nuts and seeds contain an inhibitor that holds them in a state of dormancy until
water and warmth are present. Water (soaking) neutralizes the inhibitor, liberates the enzymes,
and causes the nut or seed to grow.
Cooking/roasting destroys enzymes, making digestion difficult. Eating raw, unsoaked
nuts or seeds brings the inhibitor into play and makes them equally difficult to digest.
Our process of soaking and dehydrating supports the life of the enzymes, making digestion easy.
It also ensures better absorption of nutrients.
